Vista Ridge Estate – Merlot 2009

Hand harvested at optimal ripeness, we have produced this appealing wine which shows classic varietal characters of mulberries and cooked plums, the palate is smooth and silky with velvety tannis balanced by earthy and lingering oak flavours.

Cabernet Sauvignon 2006 (Our finest wine)

Cabernet Sauvignon is referred to as ‘the King of Grapes’. We treat our grapes like royalty to bring you this elegant, well-structured wine. It displays mint and blackcurrant fruit characters intermingled with hints of leather and roasted nut oak. These flavours are complemented by soft tannins, providing a long, balanced finish on the palate.

Cabernet Rosé 2009
$8/bottle or $80/dozen

This rosé has the crispness and fruitiness expected of rosé but maintains the long, slightly dry finish characteristic of Cabernet Sauvignon grapes. Peach and raspberry intermingle with complex toasty flavours combine to provide a perfect lunchtime wine, an entrée or an accompaniment to Asian and sea-foods.

Cab Mac (Sweet Red)
$12/bottle or $120/dozen

Produced using an Australian version of the French process of carbonic maceration, this is a slightly softer, medium bodied Cabernet Sauvignon with a sweet finish. This wine displays mint and black current characters intermingled with hints of cinnamon and honey. These flavours are complimented by soft tannins making this a very different wine.

Cab Port
$10/bottle

This classic vintage port has been aged in small oak barrels for 4 years prior to bottling. It exhibits complex aromas of black cherries, mocha coffee and an overriding rancio character associated with the finest ports. The palate is luscious and flavoursome with dark flavours of prunes and coffee, a long sweet finish and balanced supporting tannins. It makes a lovely dessert wine after dinner or a pre dinner winter warmer.

The Cabernet Sauvignon vines benefit from the North facing slopes, temperature weather and ideal soils. Low yields per acre, hand picking at optimal ripeness and basket pressing allow production of small volumes of complex, full bodied wines.
